1/2lb Ground Turkey
4 tbs Soyrizo
2 tbs Olive Oil
1 Large Red Onion
2 Large Carrots
1 Small Red Bell Pepper
1 Small Green Bell Pepper
1 Small Yellow Bell Pepper
2 Large Sweet Potatoes
1 Cup Chopped Cilantro
1 Fresh Spinach
2 Quarts Chicken Stock (Low Sodium)
1 tsp dried oregano
1/2 tsp cumin
1/2 tsp turmeric
Salt & Pepper
garnish: goat cheese (optional)
Chop onion, bell peppers (remove seeds), peel and cube sweet potatoes, chop carrots.
Mix soyrizo and turkey in a bowl. Heat olive oil in a heavy bottomed large pot. Add in the turkey soyrizo mix. Turn and brown on all sides.
Add dried oregano to the pot. Add in the onions, carrots and bell peppers. Saute until the onions are translucent. Add salt.
Add in both containers of chicken broth. Bring to a boil. Add in sweet potatoes. Lightly boil for 5-6 minutes.
Add in cilantro, spinach, salt and pepper.
Simmer for 4-5 minutes. Serve with crumbled goat cheese (optional)
