Lunch in a bowl, it's kinda my thing.

When it comes to lunch I like things quick and simple. Large bowl lunches have become my go to way to get a delicious lunch in.  I start with a bed of greens add whatever proteins I have left over from dinner and then add a variety of add ins. It's a fast way to get a lot of nutrients, pack in protein and have a really tasty lunch. Mix and match your left overs, meal prepped salads, cheeses and nuts and seeds. Hello summer flavors! In this bowl I combined my meal prep grilled chicken with arugula and Italian white bean salad. Protein packed and super savory and fresh. 

Italian white bean salad:

  • 1 can white beans
  • 1/4 cup chopped sundried tomatoes 
  • 1/2 tsp. minced garlic
  • 2 green onions chopped
  • 4 leaves of basil chopped 
  • 2 tbs. diced roasted red bell peppers

Toss in:

  • juice of 1/2 lemon
  • 1 tbs olive 
  • 1 tsp white wine vinegar 
  • salt and pepper


Steak and Watermelon Bowl


This lunch combines fresh watermelon with steak for a refreshing and satisfying flavor.

Arugula tossed in balsamic dressing with pine nuts, goat cheese and watermelon are served along side sliced filet mingon and 1/2 a haas avocado. I seasoned the avocado with Trader Joe's "Everything but the bagel" seasoning. 

Tips on cooking a perfect steak:

  • Take it out of the fridge 10-15 min before grilling. 
  • Season with Sea Salt before cooking 
  • Heat a pan to medium high 
  • Cook in butter. 1/2 tbs is perfect. 
  • Turn your steak only once cooking evenly on both sides.
  • Allow your stead to rest for a few minutes before slicing.
  • Cut your steak against the grain.

Chicken Kabob Left Over Bowl


Make the most of left overs by serving them the next day for lunch. Grilled chicken and vegetable kabobs make for a wonderful lunch that is ready in minutes. Marinade your kabobs for at least 20min-1 hr before grilling. Serve with white rice and devour. 

Chicken Kabobs:

  • Chicken Breast tenders 
  • Red Onion 
  • Bell Peppers
  • Zucchini 


  • 1/2 cup soy sauce 
  • 1 tbs Olive Oil
  • 1 tsp. honey 
  • 1 lemon Juiced 
  • Salt and Pepper
