This recipes makes two servings.
1lbs chicken breast
1 small red bell pepper
1 small green bell pepper
1 small red onion
2 tbs extra virgin olive oil
1tsp dried oregano
1 can black beans
1 cup rice
shredded Mexican cheese
Cook rice according to package.
Sauté bell peppers and onion in 1tbs of olive oil in a large pan. Add a pinch of salt, toss. Set aside.
Brown chicken in 1 tbs olive oil. Once fully cooked add taco seasoning.
Assemble burrito bowls and garnish to your liking.
