Healthy Burrito Bowls

Ingredients: 

  • 1lbs chicken breast  
  • taco seasonsing  
  • 1 small red bell pepper  
  • 1 small green bell pepper  
  • 1 small red onion
  • 2 tbs extra virgin olive oil  
  • 1tsp dried oregano  
  • 1 can black beans  
  • 1 cup rice  
  • salt  

Garnish

  • shredded Mexican cheese  
  • fresh cilantro  
  • salsa  
  • shredded iceberg

Directions:

  1. Cook rice according to package.
  2. Sauté bell peppers and onion in 1tbs of olive oil in a large pan. Add a pinch of salt, toss. Set aside.
  3. Brown chicken in 1 tbs olive oil. Once fully cooked add taco seasoning.
  4. Heat beans.  
  5. Assemble burrito bowls and garnish to your liking.  

Tracking macros? If you are low on carbs you can use less rice and up the chicken portion. Add more veggies for volume. This is the perfect make ahead meal for easy grab and go lunches.
