Banana-Blueberry Protein Muffins

Try out my yummy protein muffins made with @tryabouttime vegan protein. These tasty muffins will not only satisfy your taste buds, but will also keep you fuller longer.

What you'll need:

  1. 2 ripe bananas

  2. 1 large egg

  3. 1.2 cup Greek Yogurt

  4. 1/4 cup almond milk

  5. 1 cup oat flour

  6. 1 tps. baking powder

  7. 3 scoops

  8. 3tbs Coconut Sugar

  9. 1tsp. Vanilla Extract

  10. 1 tsp. cinnamon

  11. pinch of salt

  12. 1/4 cup blueberries

  13. non stick spray

Directions

Preheat oven to 350F

In a medium-large bowl:

  • mash 2 ripe bananas

  • mix in 1 egg

  • 1/2 cup Greek yogurt

  • 1/4 cup almond milk

In a small bowl sift and combine:

  • 1 cup oat flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 3 scoops protein

  • 3tbs coconut sugar (optional)

Combine wet ingredients in to the dry. Then mix in:

  • 1 tsp of vanilla extract

  • 1 tsp cinnamon

  • pinch of salt

  •  Mix in blueberries

  • spray muffin tins with non stick spray and bake

Bake at 350F for 20 min
