Italian Bean Salad

This salad makes for a great lunch on a warm day. Packed with fiber and protein and completely satisfying in every way. This recipe is a great meal prep item for easy grab and go meals. 

 

Ingredients: 

1 can Cannellini Beans  

1/2 cup fresh grated parmesean  

1 scallion chopped  

1/4 cup sundried tomatoes chopped  

1 small red bell pepper diced and lightly sautéed  

3 tbs chopped fresh parsley  

3 tbs pancetta cooked  

1 tbs olive oil 

1/2 tbs balsamic vinegar  

1/2 tbs fresh lemon juice  

Salt, pepper, red chili flakes 

 

Combine and serve
