Anyone who knows me, knows I take breakfast seriously. Skipping breakfast is an absolute NO-NO in my family. You should eat breakfast everyday- why? Well for starters it's delicious. And it jumpstarts your metabolism for the rest of the day. 

Just one skipped meal causes your blood sugar levels to fall, and if you are skipping breakfast they will never rise at all. Sugar is one of the things your body runs on, and if it isn't fueled properly every organ in your body is affected. It also causes a spike in your cortisol levels which causes anxiety and stress!

 

FRITTATA 

What you will need:

  • 4 large eggs + 1/4 cup egg whites (or 1 additional egg)
  • 4 strips turkey bacon 
  • 3 chives chipped
  • 1/4 cup seeded and chopped tomatoes
  • 2 tbs shredded mozzarella 

Instructions:

  1. Preheat oven to 400F
  2. Whisk eggs
  3. Chop Veggies 
  4. Spray baking dish with non stick spray
  5. pour eggs in to baking dish
  6. add in veggies 
  7. sprinkle with cheese
  8. bake for 10-12min 

Makes 4 servings-  Total Calories per serving- 86/Carbohydrate 3 g/Protein 13 g/Total Fat 2 g
