Quinoa Parmesan Poppers

Holiday parties can be a ton of fun. But when you are on a Fit mission from hell they can't feel like a valley full of land mines. 

Here is a dish that your guests or hosts won't scoff at as your rabbit food but rather the hit of the evening. 

 

What you will need:

  • 1 cup of quinoa
  • 2 cups veggie stock (for quinoa)
  • 2 eggs 
  • 1/4 cup of Parmesan freshly grated (say no to the green can!) 
  • 1/4 cup grated mozzarella 
  • 1/4 cup Goat cheese (you can sub cream cheese here)
  • 1 tbs crushed garlic
  • 1 shallot chopped 
  • 3 tbs of fresh chopped parsley
  • 3 tbs chopped sundried tomates 
  • 3 tbs chopped marinated artichoke hearts
  • non stick spray

Directions 

  1. Cook quinoa prepared with Veggie stock according to direction on package, cool completely 
  2. Preheat oven to 400, lightly mist muffin tins 
  3. In a large bowl add prepared quinoa and all ingredients
  4. fill each one with 1 heaping tbs of the mixture
  5. Bake for 10-15 min or until tops are golden 

Customize these for your guest taste. Swap jalapeno and cream cheese and add bacon for a game day snack.
